Created by legendary French oenologist Jean Lenoir, Le Nez du Café is a world-renowned sensory training tool designed to develop and refine olfactory memory. It serves as a fundamental global standard for the Specialty Coffee Association (SCA) and is a core tool used for Q Grader certifications to calibrate sensory language.Key Kit Editions
- Temptation (6 Aromas): A budget-friendly introduction featuring six major aromas representing core coffee scent families: dry/vegetal, fruity, animal, and toasty.
- Revelation (36 Aromas): The traditional standard housed in a signature wooden box. It covers 36 critical aromatic reference points, including earthy, vegetable, spicy, floral, fruity, animal, and toasty notes.
- Le Nez du Café 2.0 (60 Aromas): Co-developed with the Coffee Quality Institute (CQI), this comprehensive edition features 60 formulated aromas. Sensory Categories
The essences replicate chemical compounds naturally occurring in coffee beans and are divided into distinct groups:
- Fruity & Floral: Lemon, apricot, apple, coffee blossom, and blackcurrant.
- Vegetal & Earthy: Potato, cucumber, straw, cedar, and fresh earth.
- Spices: Clove, black pepper, vanilla, and coriander seed.
